- LEMON PULAO -

INGREDIENTS:

PRATEEK Basmati Rice 400 g
Water 800ml (1 1/2 pints)
Salt to Taste
Refined Vegetable Oil 30ml (1 fl oz)
Split Gram 7 g (1/2 oz)
Curry Leaves 15 g (1/2 oz)
Cumin Seeds 1/2 tsp
Mustard Seeds 1/2 tsp
Asafoetida Powder pinch
Turmeric Powder 1/2 tsp
Chopped Green Chilli 1
Lemon Juice 60 ml (2 fl oz)
Coriander Leaves 15 g (1 1/2 oz)
Coconut Powder 8 g (1/2 oz)
Lemon Slices 3-4
Lemon Slices to Garnish
Coriander Leaves to Garnish


METHOD:
  1. Heat oil in a heavy bottom pan. Add split gram, curry leaves, cumin seeds and mustard seeds. Stir for a minute.
  2. Add asafoetida powder, turmeric powder, chopped green chillies, PRATEEK Basmati rice and salt to taste.
  3. Fry very gently for another minute then add the water.
  4. Bring to the boil and simmer, covered until almost all the water is absorbed.
  5. Fold in chopped coriander leaves, lemon juice, coconut powder and lemon slices. Remove from heat and keep covered for 2 minutes to allow the flavours to infuse.
  6. Serve immediately, garnished with lemon slices and coriander leaves.
